This week there was a great deal on chicken at the grocery store... so we made two delicious chicken dishes. We hadn't used our new deep fryer for a while, so we decided to make chicken fingers with a honey-dijon dip, served with steamed broccoli (it cancels out the calories from the fried food). We used the rest of the chicken later in the week to make a sauteed chicken dish with rice. TIP ON RICE: instead of cooking rice with water, use chicken stock. Much more flavor- it can really stand alone! And least but not last, sugar cookies. One plate has Betty Crocker icing, and the other has homemade icing. Enjoy!
