Comfort Food

Oops! We forgot to post a meal. Here is what we made for lunch on Christmas Eve. The potato casserole and pine nut salad are both traditions on Christmas Eve in Whitney's family. We decided to share this tradition with Neil's parents, as they came to visit on Christmas Eve.

The last picture is of a monsterous meatloaf made from a recipe in The Pioneer Woman's Cookbook. The book is filled with "recipes from an accidental country girl," and reflect her Western way of living (and eating). If you are not familiar with Pioneer Woman, head on over to www.thepioneerwoman.com and check her out.

These snowy days off of school optimize time to try out new recipes. Tonight: The Pioneer Woman's homemade pizza recipe, and a blog post to follow!

  1. I'm thinking that meatloaf could probably feed 500. I mean maybe it's the perspective, but that is one honking meat dish!
